We pair it with Darjeeling done properly: the toy train's steam section rather than the whole crawl, tea at a working estate with the planter and not a gift shop, and Tiger Hill only if the forecast earns it, a 4 a.m. start for cloud is a bad trade and we will tell you so the night before.
